Top 5 Paleo Crock Pot Meals


I decided to go through all 2 years of my blog and pull out the best slow cooker/crock pot meals!! So here they are: 



From my Southern Comfort Paleo Cook Book here are:
Slow Cooker Paleo Apricot Pork Chops 
What you Need: 
- 4 pork chops
-1 onion chopped
-1/4 c sherry
-1/4 c apple cider vinegar
-1 cup chicken stock
-1 cup cut dried apricots
-Some sage
-A cinnamon stick 
-Small apple 


 First rub the pork chops with some salt & pepper then brown them in some Avocado oil (3 min each side) Place them in the slow cooker.
Add some butter to the pan and add onions, 1/4 c sherry, 1/4 c apple cider vinegar, 1 cup chicken stock, 1 cup cut dried apricots, some sage, a cinnamon stick and cut up an apple and pour the mixture into the cooker.
When I made this I cooked it on high and had to switch it to low because we went to work out. So cook on high for 2 1/2 hours, switch it to low for around 3 hours.
 I served with brussel sprouts.
Honest opinion- I am not the biggest fan of meat and sweetness, but it was good. Definitely worth the time!

Crock Pot Paleo Meatballs
You need a crock pot. And some time to make these. 

What you need: 
-1lb ground beef 
-1lb hot or mild italian sausage 
-1/2 cup almond meal
-1 jar of marinara  
-2 carrots 
-3 celery sticks 
- 1 onion
-garlic cloves (3-5) 
-3 eggs 
-spices (I used salt, pepper, garlic powder and red pepper flakes) 

Step 1: Add the ground beef, spicy sausage, diced carrots and diced celery to a big bowl.  

                                      

Step 2: Add 3 eggs, almond meal (I get mine from Trader Joe's)  and the minced garlic to the 
bowl.
                                      

Step 4: Then mix all the ingredients together and make baseball sized balls with the mixture. 

Step 5: Put it in the slow cooker on low and added all the meatballs, the onion and then added a jar of marinara. 
Step 6: Cook for low for 6-8 hours and serve it with some spaghetti squash or Zoodles. 
 This was delicious!! And it went very well with a nice glass of red wine! :) 



Best Paleo Crock Pot Pulled Pork (Ever) 

 
What you need: 
-A 2 lb pork loin 
-beef broth 
-garlic powder
-onion powder
-s & p 

All you do is combine 2 cups beef broth, 1 tablespoon of garlic and onion powder, and salt & pepper to taste in a crock pot with the pork. Let it cook for 8-10 hours on low and pull it apart with a fork when finished. I served this with cauliflower rice, salsa and guacamole.

Easy Crock Pot Paleo Fajitas 


What you Need: 
1 lb chicken breasts
3 Peppers (Green, Red, and Yellow), sliced
1 Onion, sliced
1 Package of Taco Seasoning

This recipe is as easy as 4 steps: 

1. Slice peppers and onions then place them on the bottom of the crock pot
2. Put Chicken on top of peppers and onions
3. Sprinkle taco seasoning on the top
4. Cook on low for 6-8 hrs (or high for 3-4)




All together with the draining, adding of liquid, even serving the dish this dinner took me less than 15 minutes to make. After taking 5 min to cut the veggies the bulk of the work is done and this is why this recipe is one of my new favorite recipes of all time.

Paleo Slow Cooker Mexican Pulled Pork 
What you Need: 
-1-2lb pork loin
-1 onion
-Green Chiles (I used small Trader Joe's Can)
-Vegetable or chicken stock or broth (you just need liquid)
-1 pack of taco seasoning

This recipe is so simple. All you do is:
1. Mix the taco seasoning and broth
2. Throw all ingredients in the crock pot and cook on low for 10 hours(I was in a hurry so I cooked on high for about 3 hours and low for 4ish-you know it is done when you can easily pull the pork apart with a fork).

We enjoyed these with some brussel sprouts, guacamole and salsa. The next day we had these again with some asparagus and we munched on leftovers for a couple days after that. It is really great to have something like this in the fridge when doing Paleo (especially a challenge) because I find myself hungry during the day or needing lunch and not having anything to eat. I think that is one of the reasons I have been SO off track lately- because I am not prepared. I will go more into that later.

Easy Paleo Crock Pot Marinara Chicken with Zoodles

Hi all! It has been a while but I finally have a few minutes before baby girl wakes up to post. Easy crockpot meals have been my saving grace since having baby girl. I barely ever get the chance to cook and when I do I need something I can throw together in between nursing and poopy diapers. So I noticed I had some chicken a can of marinara...and some zuchinnis. I decided to just throw the chicken in the crock pot and pour over the marinara and it actually worked!


Here is the recipe:

Easy Paleo Crock Pot Marinara Chicken w/Zoodles 
Step 1: Pour some marinara in the bottom of the crock pot.
Step 2: Add the chicken and some spices on the chicken (I used red pepper flakes, oregano, basil and garlic powder).
Step 3: Pour rest of marinara and turn on low for 4-6 hours (depending on your crock-pot; or high for a few hours).
Step 5: Make Zoodles- see previous posts for zoodle making instructions.

Enjoy!! (I added some parmesan at the end and it was delish).
