Day 13

For brunch yesterday Matt came home for his lunch hour and we had fried eggs over leftover pulled pork with some BBQ sauce and it was very good.
We headed to CrossFit and when we got home around 8 I wanted to make something pretty fast because we were starving. So I made up a quick recipe. 

Paleo Jalepeno Bacon Sliders 

What you need: 
-1 lb ground beef 
-4 pieces of bacon 
-Handful of Jalepenos chopped
-Spices (s&p, garlic powder) 
-1 tablespoon honey
- 1 onion 

These are really easy. Start with chopping the jalepenos while the bacon cooks. Add the bacon, spices, and honey in the ground beef and mix thoroughly with your hands. 
 I made them into little patties and cooked them along with onions in the bacon grease until they were cooked. Then I added the caramelized onions over the patties and topped with avocados. I served the burgers over a bed of spinach!
I woke up for breakfast today and did not feel like the same old eggs so I made a Paleo smoothie. I used my magic bullet that I got a year ago and just figured out how to use it!!! 

Paleo Smoothie
-1 banana 
-almond butter 
-honey
-a dash of coconut milk 
-ice 

I just threw all of this in the magic bullet and mixed it up!

Days 9,10,11 and 12

WOW! It has been a while since I have posted. So let's start with Sunday :) Sunday I ate a quick banana before work and for lunch I had some leftover meatballs. Sunday night was my work party at this AWESOME wine bar in downtown Franklin. It is called JJ's Wine Bar and basically we all got a card with money on it and had free reign to go to their wine machines where you chose if you wanted a taste, half a glass or a full glass. It was awesome and I ended up skipping dinner. Which was a bad idea. When I got home I chugged a coconut water and went to sleep. My friend stayed the night because we opened the store the next day and rolled outta bed not feeling the best on Monday!! I had a banana and a piece of bacon for breakfast (horrible breakfast) and for lunch I ate some chicken with kale and cabbage. 
For dinner I made some chicken at it was a really fast and easy recipe. I just rubbed each piece with olive oil, salt, pepper and oregano. Then I took some chopped up garlic and stuffed it under the skin of the chicken. I put it in the oven for about 30-40 minutes at 350 and we enjoyed! My sweet potatoes turned out awful so we won't even talk about it. What this meal needed? MORE VEGGIES. 

Easy Chicken!
What you need: 
-Chicken pieces with the skin on 
-olive oil
-spices 

Tuesday I woke up and headed to a meeting. By the time I got home it was 11:30 and I was STARVING so I made some fried eggs and bacon. It was delicious. I started dinner right after breakfast and made what is now our new favorite recipe that I found on Paleo OMG. 

Best Pulled Pork Ever 

What you need: 
-A 2 lb pork loin 
-beef broth 
-garlic powder
-onion powder
-s & p 

I love crock pot recipes. And what I love more than crock pot recipes is crock pot recipes that are so easy I can make them in my sleep. This is one of those and I give Paleo OMG huge props for this gem. 

All you do is combine 2 cups beef broth, 1 tablespoon of garlic and onion powder, and salt & pepper to taste in a crock pot with the pork. Let it cook for 8-10 hours on low and pull it apart with a fork when finished. I served this with cauliflower rice, salsa and guacamole. Then Matt told me he was feeling, "kind of over cauliflower". After the initial shock I agreed that yes we have been eating a lot of the best vegetable ever. Guess it is time to mix it up a bit!!

Today I woke up and had a latte with almond milk and a chorizo/spinach omlette from a place called The Perch and it was delicious. Tonight for dinner we will have leftovers and tomorrow will be another trip to Trader Joes!! 
Also- I went to CrossFit on Monday and the WOD was some fitness tests (broad jump. triple jump, cone drill) followed by a 5x5 dead lift set trying to get to your heaviest 5 in a row without letting go of the bar. My final set of 5 was with 205lbs and I was pretty pumped since it has been so long!! We are going tonight as well and I will post the WOD tomorrow.
