Week 1 and Day 11

Wow! Already Day 11... Crazy. This challenge is seriously speeding by. We have been doing really well and I will share a couple of my favorite recipes we have had this past week.

Paleo Bacon Blue Cheese Meatloaf 

What you need:
-1 lb of beef
-1 cup almond flour
-6 cloves of garlic
-Some bacon
-blue cheese
-Spices- salt, pepper, oregano...whatever tickles your fancy
-1 egg

Mix all those ingredients together in a bowl and shape them in a loaf in a meatloaf pan. Cook at 350 degrees for about 30 min uncovered- check it- if it needs more time (ours did) cover that sucker and cook it at 375 for 15-20 more minutes.

That very delicious looking garlic bread you see is Against the Grain Bread. We had this delicious meatloaf with some steamed broccoli with a pinch of parmesan on top. YUUUUMMMM!

Want to know how I measure my success of my meatloaf? Whether or not Matt puts ketchup on his. There has only been two times in our marriage where my meatloaf was ketchup-less...THIS was one of those times.

Another recipe from this week that was pretty delish was very, very simple. Some leftover taco chicken with some shaved brussel sprouts.

All you need to do is just cook the brussels in some olive oil, add the chicken so it heats up and add some spices. I added: salt, pepper, garlic powder, red chili pepper flakes and some oregano. We split an avocado and inhaled this because it was delicious.
What was so great about this was the fact it only took like 7 minutes to make and we were exhausted after CF.

Confession: in general we have been doing well in the sense of we have been eating Paleo. I have been doing bad because I have not been eating a full breakfast or lunch. I know. It is bad. I have been eating enough plantain chips to last a lifetime and haven'y been drinking enough water. Why? Because I have been busy and too lazy to take time and cook actual meals for myself during the day. I am going to start doing better... I need to EAT MORE! I know...sounds crazy because I am trying to lean out but I have noticed when I eat more (breakfast, lunch) I lose more. So I need to get back on track.
