Days 8, 9 and 10!

Days 8, 9 and 10. Wow I will have to rack my brain to remember the past few days! I will start with Monday.

Monday- Woke up in the morning and had two eggs. Today was finals week and my last week of grad school so it was a busy one! I brought some Laughing Giraffe Snacks and an apple to school. For Lunch I had leftover Lemonade- which was chicken salad and the curry cauliflower. Then after my exams I came home and ate some leftover Paleo Spaghetti. Then Matt and I went to CrossFit and a bunch of us went to Korean BBQ (yes, again). And it was delicious once again.







Tuesday- I woke up Tuesday feeling a little sick- so I had half a laughing giraffe snack. For lunch I tried out my Brian's Bowls order...and let me tell you, it was AWESOME! I had a chicken dish. At first, I will admit, it looked gross frozen. But after throwing it in the microwave for 5 mins it turned out looking really delicious. For a snack I had some plantain chips and Whole Foods guacamole.  For dinner on Tuesday I made Matt's favorite Paleo dish- Turkey and Cabbage. Here is the recipe!



What you need: 
1 lb turkey 
1 bag shredded cabbage 
1 onion 
Bacon
1 can diced tomatoes 
Olive oil 
Butter 
Honey 
Salt/Pepper
Garlic 
Cayenne 
Oregano 
Basil 
Red Pepper flakes

Here is what you do- first you use a little olive oil and saute some garlic-then brown your turkey. 
I like to add some salt, pepper, oregano, red pepper flakes, basil & cayenne. Then once the turkey is browned add a can of diced tomatoes and stir. Take this mixture and cover it with some foil then stick it in the microwave or oven to keep it warm.

Next- get some of that grass fed butter! (by the way if you are doing this challenge to lose weight I would not add the butter or the bacon, although with Paleo you NEED some fat in your diet to make up for the carbs). So grab that butter and cook some bacon! I used about 4 pieces cut in half.

After cooking the bacon remove the bacon and set it to the side to let it cool. DO NOT DRAIN the BACON BUTTER MIX! Dice an onion and throw it in the pan with the leftover bacon fat and butter. Saute the onions for about 3 minutes then remove some of them and put them on top of the turkey mix. Next grab your cabbage and put in handfuls with the onions and continue sauteing until you have cooked all the cabbage and the onions are soft. I like to add a little pepper and a tiny bit of honey or maple syrup to the cabbage- it helps take away some of the bitterness. I will also add a little more butter to the cabbage/onion mix. After the bacon has cooled- cut it into bite sized pieces and add the bacon to the cabbage/onion mix.
Next- stir all that cabbage with the bacon!! Then take out your turkey and ENJOY! I like to add some BBQ sauce for extra flavor (just find one that is Paleo). I like to serve it by putting the cabbage on bottom then topping it off with some turkey. 

 

Now we are onto Wednesday. Wednesday was my final day of grad school so I cheated a little with some champagne and wine. I had another laughing giraffe snack for breakfast then a large brunch at a place in Malibu called Marmalade Cafe. I had eggs and a sausage patty with slice tomatoes instead of potatoes and toast.
Later that day I had some plantain chips, guacamole and salsa. While everyone else had potato chips and delicious fooooooood. It was tough and I did cheat with the champagne but I have not ATE anything non-Paleo. Wednesday night we went to a place called Big Daddy's with our friends- Natalie and Boggs. We ate cheeseburgers- without the bun or cheese of course, with some sweet potato fries. 
And finally to today- Thursday! It was an easy day. I had a handful of nuts for breakfast. Then for lunch I had leftover Turkey Cabbage. And I also had more Turkey Cabbage for a snack before CrossFit- which I better go so I can get ready for! I will post dinner later tonight.

Day 7


One week mark! Ahh! So today I woke up, had one egg and then went to CrossFit. At CrossFit I got to see my friends beautiful baby boy. Then me and two friends from CrossFit went to this place called Lemonade, and let me tell you- this place is delicious! Also there were tons of Paleo choices which was awesome. I got some curry cauliflower with almonds, coconut mango chicken salad and spicy chicken salad.  Just check out the menu: Lemonade. I also tried a sugar free lemonade- and it was really, really sour. I don't think I will do that again.

Then for dinner it was time for one of our favorites- Spaghetti Squash with Meaty Marinara!

For this recipe you will need: 
1 spaghetti squash 
2 lbs ground beef (grass fed if possible) 
A large can of Trader Joe's Marinara 
4 garlic cloves 
olive oil 
Spices (we like basil, italian seasoning, garlic salt & red peppers) 


Matt decided he wanted to cook dinner tonight- so he started by cutting the squash in half. Then he put a little olive oil on a baking sheet and put the squash open face down and baked in the oven on about 375 degrees for 45 mins- once you can stick your fork in it- it is done.






While the squash was cookin' Matt got the sauce started. He started by choppin' up the garlic and sauteing it and then added the ground beef. He cooked the beef, drained the beef and then added the marinara sauce.



Next- he took out the squash- flipped it over and used a fork to get the 'spaghetti'. Use your fork and scrape the squash.
 
  Add the sauce to the squash and BAM. Dinner is cooked.
