TOMORROW IS THE DAY! Tomorrow (Monday) is the start of our 30 day challenge, and we have completed almost everything on our list to prepare. We went grocery shopping, we made a menu for the week, we cleaned out the fridge and pantry, we took before pictures and I thought about making Paleo Mayo. I also decided instead of making Paleo bars we are just going to eat the Laughing Giraffe snacks in their place. 
These are really tasty and although they are expensive (like $9 a bag) it is about the same price as buying all the nuts in order to make Paleo bars.

Speaking of expensive... a lot of people say the reason they won't do a Paleo challenge is because, "healthy food is so expensive." Well, if you shop at Whole Foods.. then yes! But if you shop at Trader Joe's or somewhere comparable- then it really is not that bad! We left Whole Foods today with ONE bag of groceries which contained...One spaghetti squash, one case of coconut water, one garlic head, two laughing giraffe snacks, some almond flour, sesame seeds and one jar of salad dressing and the grand total was....

$60!!! SIXTY BUCKS! I mean wow. That is a little ridiculous. We knew the beginning of this challenge would be a little pricy (the almond flour & coconut water) and we were prepared. But this stuff should last us almost the entire month (minus the garlic & spaghetti squash which were each cheap). So where do we shop for our everyday Paleo needs? Trader Joes! We left TJ's with three bags filled to the rim with groceries and almost a week's worth of food which included: cauliflower, broccoli, broccoli slaw, an avocado, a tomato, 2 onions, 5 apples, ketchup, tomato paste, taco seasoning, jalepenos, garlic, blueberries, plantain chips, salsa, ham, chicken sausage, turkey patties, ground turkey, cumin, hand soap, spinach, a lemon, butter and lettuce for..... 
$59 bucks! A dollar cheaper then Whole Foods and at least three times the amount of food. The moral of the story is you can buy healthy, fresh foods for a reasonable price if you know where to shop.

So what is the menu for the week? Here it is:

Monday- Paleo Tacos with Guacamole, Plantain chips and Salsa
Tuesday- Paleo Burgers with Avocado and Broccoli Slaw
Wednesday- Spinach Chicken with Garlic Roasted Cauliflower
Thursday- Spaghetti Squash with Meat Sauce

We haven't decided what to make Friday but have a big list of meals we compiled to choose from. We did not mean to have Turkey two nights in a row- we meant to grab beef patties but grabbed turkey on accident.

Also- for Paleo its best to use grass fed beef, free range chicken and high quality meats. The butter I use is unsalted Kerry Gold which is from grass fed cows.

K one last rant then I will be done for the day. Since we have been eating Paleo for a while I have some essentials in my pantry that you may not have so here is a list of "must haves" when attempting a paleo challenge:

  1. Olive Oil 
  2. Coconut Oil 
  3. Coconut Flakes
  4. Maple Syrup 
  5. Almond Flour 
  6. Almond Meal 
  7. Coconut Flour 
  8. Eggs 
  9. Coconut Milk 
  10. NUTS! Almonds especially. 
Well tomorrow is the day! I plan on having some eggs or a giraffe snack for breakfast, packing an apple and some nuts for lunch and coming home and making some Paleo Tacos! I will post the recipe and picture of the process (its really easy tomorrow). Thanks for reading!
